Planting began with Bourbon coffee 10 years ago, followed by varieties such as Costa Rica 95, Castillo de Colombia, Caturra. From these varieties, an excellent cup is being generated, with pleasant aroma.
This farm is located in Santa Ana and the slopes Ilamatepec volcano or Santa Ana Volcano, at a height of 1,600 to 1,700 meters above sea level.
The coffee is planted and protected under natural remnants of the area, mountain shade. There is a variety of shade that comes from the Pepeto trees. This tree helps the soil to mold an excellent organic matter, due to the type of leaf that fall off and the also the wood when pruning.
El Cipres farm is nature-friendly; there is a wide range of birds: bluebirds, magpie, parrots, toucans, Sparrow-hawk, etc. And as for animals, there are presence of deer and red foxes. Animal hunting is prohibited and as well as tree predation.
The climate is tempered – cold. The average temperature ranges by 24 degrees Celsius with maximum temperatures of 28 and minimum of 10 degrees.
Rainfall: The amount of water is about 2,400 to 2,500 mm between the months of April and October. The coldest temperatures occur in the months of December and January. That freshness is what upgrades the grain quality.
